Coffee cupping, orcoffee tasting, is the practice of observing the tastes and aromas of brewed coffee.
A standard coffee cupping procedure involves deeply sniffing the coffee, then slurping the coffee from a spoon so it is aerated and spread across the tongue.
Simply put, coffee cupping is the standardized way in which our industry tastes coffee objectively.
Every time we get samples, or need to do some quality control... we cup the coffee.
It is a way to not let the brewing method affect the objective flavors of the coffee.
